Zucchini Fritters With Tomato Salsa

SERVES: 6 people, as a snack
Ingredients for the Salsa
- 300g of ripe cherry tomatoes
- 1 small bunch of coriander
- 1 lime
- 1 green chilli
- 1 garlic clove
- 2 tbsp of extra virgin olive oil
Ingredients for the Fritters
- 3 zucchinis
- 3 spring onions
- 1 tsp ground cumin
- 100g of self-raising flour
- 1 large egg
- 2 tbsp of olive oil - for frying
Method
Salsa:
- Dice the cherry tomatoes
- Finely chop the leaves of the coriander (save the stalks for the fritters)
- Juice the Lime (save the lime to zest for the fritters)
- Finely chop and deseed the green chilli
- Crush the garlic clove
- Combine all ingredients into a bowl with 2tbsp of olive and sprinkle with salt and pepper and put to the side to let the flavour develop.
Fritters:
- Trim the ends of the 3 zucchinis and grate down the length of the zucchini to get thin strips
- Thinly slice the 3 spring onions
- Put both ingredients into a bowl and add the coriander stalks, lime zest, cumin & self-rasing flour
- Stir in the egg and season with salt and pepper
- Add olive oil to a non-stick frypan over a medium heat
- Shape the mixture in your hands into a ball and flatten, then fry for 2-3 minutes on each side until golden
- Serve warm with the tomato salsa.
